I want to Roast a Pig — Need Sources for Pig, Roasting Equipment:

Question:

I want to roast a pig — enough to feed 20-30 people — in about a week and a half. I live in Williamsburg Brooklyn. I am most interested in renting a Caja Chino, but I am open to other cooking methods. If you have attempted a project like this I would really appreciate any advice and potential sources for the pig itself and equipment.

I have a Caja China I would be willing to rent to you, as long as it is not on October 9th, as I will be roasting my own then. I even live in Williamsburg, so it would work out easily. I have roasted them before and can help you with any advice or recipes.

As far as getting a pig, Esposito’s Pork Shop in Manhattan worked out really well for me last time, but that was when I had access to a vehicle. For something closer, Mario’s Butcher, near the Lorimer stop can get them with a little bit of notice:

They can also get goats, which I was planning on trying in the Caja China this weekend, but plans fell through, so that will have to wait.
